Cocoa-date FIT truffles

Good morning, how are you all?

Starting my new blog with a very delicious and nutritious recipe that came up after I found some dates on sale at the grocery store lol …

Them I started to think on how I could use those dates and the first thing that crossed my mind were those famous “energy balls” they always have at the natural food cafes. So I went home, looked up some ideias on the internet, grabbed all the ingredients I already had at home and voil… My FIT truffles turned out to be super yummyyyy!

Now here is the recipe… Write it down, I promise it is worthwhile!

Ingredients:

  • 1 cup chopped pitted dates
  • 1/2 cup raws almonds
  • 1  tbsp natural peanut butter
  • 1 tbsp 100% cocoa powder + for dusting
  • 1 tbsp chia seeds (optional)
  • 1 tbsp honey

Directions: First place the nuts into a food processor and mix until they turn into a finely ground almonds. Add the chopped pitted dates and mix a little bit more. Now slowly add the other ingredients into the food processor until it becomes a thick and homogenous paste and put it in the refrigerator for 25 minutes. Now with wet hands, roll them into small truffles, roll them in the cocoa powder (you can also dust it with cocoa nibs as an crunch alternative) and they are ready to serve.

TIP: Depending on your diet, these truffles could be a great pre-workout meal or just a between meals snack. And they go VERY WELL with a freshly brewed coffee #coffelovers .

I hope you all liked my recipe… Please let me know how it turned out.

Hugs and kisses!

Sheina
