Breakfast Game-Changer: 3-Ingredient Healthy Pancakes

Happy Thursday people! How are you’ll doing?

My MBA classes are finally over and now I can enjoy Christmas break with my hubby, family, and friends. Last week, as most of you know, my husband and I took a mini vacation and enjoyed a Disney World marathon in Orlando, FL. It was my first time going to Disney and absolutely loved very minute of it (specially the Magic and Animal Kingdom Parks) . That place is so magical and we already want to go back 🙂

Anyway, I know it has been a while, but today I want to share this healthy and easy pancake recipe. And trust me, this is a breakfast game-changer!


Breakfast Game-Changer: 3-Ingredient Healthy Pancakes 


  • 1/8 cup coconut flour
  •  1/2 banana
  • 2 eggs
  • Cinnamon to taste


  1. Mix all the ingredients together until well blended.
  2. Heat a large skillet or griddle (medium-high heat) and transfer the batter onto skillet (this recipe makes 4 small pancakes). Cook until tops are covered with bubbles and edges look cooked. Turn pancakes over, and cook a little more until bottoms are golden brown.
  3. Be creative when choosing your toppings. Use fruits, seeds, nut butters, yogurt, chocolate chips, etc. My favorite toppings are peanut butter and fruits 🙂
