Today I want to share a quick and healthy recipe that I made last weekend for a breakfast date with my girlfriend. These DELICIOUS and nutrient-packed muffins are super to make, and will definitely brighten your morning!
TIP: I’ve done this recipe using a 9×9 cake pan but I personally like the muffins version way better. They come off from the pan more easily, and are perfect options for healthy grab-and-go snacks/breakfast.
Healthy Blueberry Baked Oatmeal Muffins
- 1 ½ cups quick-cooking oats
- ¼ cup almond meal
- 1 tsp baking powder
- ½ tsp sea salt
- 1 tsp ground cinnamon
- 1 cup smashed banana
- 1 cup blueberries
- 1 large egg
- ¼ cup coconut sugar or pure honey
- 1 cup unsweetened vanilla almond milk
- Coconut oil to grease the pan
In a bowl mix all the dry ingredients (oats, almond meal, baking powder, salt, cinnamon), and set aside.
In a different bowl, beat eggs, add smashed banana, almond milk, and coconut sugar or honey, and stir until combined.
Add dry ingredients to the wet mixture and stir until well blended. Gently, add blueberries.
Lastly, pour the batter into a greased 12-cup muffin tin, and bake in preheated oven at 400 degrees F for 20-22 minutes or until the tops are set and golden brown.
Serve warm or cold.. and ENJOY!
