Hope you had a great (cold) week and have fun things planned out for the weekend. Life has been a little busy with school, work, getting ready to move to a new place, and everything else in between! But I can’t complain at all… Life is GREAT!
Anyway, today I want to share with you a new recipe I tried last week and was a total hit (I have done it 3 times already lol). These cookies are protein packed, nutrient-rich, and DELICIOUS!
Healthy Pumpkin Spice Cookies
¼ cup coconut oil, melted
¼ cup honey
1 cup rolled GF oats
1 cup GF quick oats
⅔ cup unsweetened, dried cranberries
⅔ cup pumpkin seeds
¼ cup ground flaxseed
1 teaspoon pumpkin pie spice
½ teaspoon sea salt
½ cup pumpkin puree
2 eggs, beaten
Preheat oven to 350 F.
In a separate bowl warm the coconut oil and honey.
In a large bowl combine the oats, cranberries, pumpkin seeds, ground flax, pumpkin pie spice and salt. Add the pumpkin puree, eggs and warmed coconut oil and honey. Stir until fully combined.
Drop scoops of the mixture onto a cookie sheet and bake for about 20 minutes or until edges are lightly browned. And like always… Serve the cookies warm and with a good cup of coffee 🙂
These cookies are great option for snacks and on-the-go breakfast!
I know I know, it’s been a while… but life has been a little busy lately and I haven’t had time to blog as much. My house is under construction (which is driving me C R A Z Y), and my MBA classes are consuming almost all my free time. But better later than never, right? Now I’m back and I promise to come here more often.
If you follow me on Instagram you probably know I haven’t been able to cook as much and because of it, microwave as become my best friend. So today I decided to share with you this quick and healthy recipe that only takes few ingredients and a microwave!
5-minute Healthy Banana Mug Cake
1 smashed banana
2 tbsp oats
1 tbsp almond milk (or preferred milk)
1/4 tsp baking powder
Cinnamon to taste
INSTRUCTIONS: In a mixing bowl, combine all the ingredients, and mix until well blended. Transfer the mixture to a mug, place it in the microwave for 2 minutes. Pick your (healhty) toppings and ENJOY!
PS: My favorite toppings are peanut butter, honey and cinnamon, and dark chocolate chips!

I got to go to Cody, NE with my American family and I had a BLAST ! On Saturday I got to spent part of my day at the rodeo, on Sunday we had my american grandma’s 90th birthday party, and on Monday morning we spent time at the family’s ranch as they were doing branding. Such a fun and much needed long weekend!
Anyway, I am sure we all ate while more than we needed over the weekend so, I decided to share with you a old and delicious “low-carb” recipe!
It is delicious, healthy, and super easy to make!
Low-carb Tuna Balls
– 80g finely chopped cooked broccoli
– 60g light tuna
– 10g flexseed grounds
– Seasonings (I used pink salt and oregano)
Directions: Stir all ingredients together in a medium bowl until thoroughly mixed. Cover it up and place in the refrigerator for at least 30 minutes. Once chilled, roll it into small balls, and bake them on a preheated oven at 425°F for 25 min or until “golden”.
** It makes around 3 medium size balls.

Few weeks ago, more exactly on April 22nd, I had the pleasure to be part of the second INDULGE KC event, founded by Sarah Buchanan (the BEST cycling instructor). The INDULGE is the perfect combination of inspirational speeches, workouts, healthy foods, and positive vibes. The goal is to create a day where woman come together to put themselves first, define their own balance, and feel like BADASS BABE WARRIORS.
To me, INDULGE was more than just a fitness event. It was a day full of inspiring and positive words that encouraged me to believe in my dreams (even more), and to have the strengths to pursue them.
INDULGE KC 2017
The event was held at the Freight House Fitness (one of coolest boot camp space I’ve seen) and we were welcome with healthy treats from Unbakery Juicery including their delicious protein balls, Rawxies bars, and warm coffee.
The event started with few words from REbel,a student driven, peer education and prevention program that focus on helping people with body image issues. LOVE yourself, LOVE your body. That was the main message of the speech. We discussed how the society and social media are negatively affecting people and making them believe they are not good enough.
But, by the end of the speech I realized that WE ARE ENOUGH! We just need to create a “positivity bubble” around by accepting compliments and learning to saying THANK YOU, complimenting people not only based on their appearance, focusing on our internal well being, and the most important one, saying something good about ourselves everyday!
The next speaker was the event creator, Sarah Buchanan. She is a woman with a strong personality. I first talked Sarah through Instagram DM, but when we first met I could already fell her “good energy”. I loved her message! She talked about passion, going after our dreams, and doing what makes you happy. If someone says you can’t do something, then ask yourself “WHY NOT?”. We need to set our goals, take action, and achieve them no matter what other people might think of it! Prove to yourself you are capable of anything you set your mind to do. Thanks for the great message Sarah 🙂
Next we heard from Diana Davis, a Kansas city marathon runner and Lululemon’s store manager. Her message was great. She spoke about life goals, the importance of writing them down, and a few steps we need to take to accomplish them. My favorite part of her speech was when she asked us to close our eyes and visualize our lives in the next 3-5 years. Then we wrote down how we felt in that situation, who was around us, and what surprised us the most about our vision. It was a simple exercise, but it helped me realize where I want to be with my life and the steps I need to take reach my happiness.
Towards the end we heard from Hailee Bland-Walsh. She is the owner and founder of City Gym, a former professional soccer player, and motivational speaker. It was one of the most inspiring speeches I’ve heard. She started off with a very strong statement, “BALANCE IS BULL SHIT”. What? I’ve always said that balance is everything! But then, I started to understand her message. Hailee explained that when you have passion for something or a project you really want to achieve, you CAN NOT have balance. To be successful and to reach your dreams, you have to put all you have into it until you reach them. As she said, to have balance you have to be perfect, and that is impossible. I loved her message. She made me rethink about my actions and what and who deserves my time and love.
Besides all the motivational words, we also had outdoor boxing workout by Title Boxing Club, boot camp circuit by Freight House Fitness, and finished with an yoga+ stretching class by Power Life Yoga. Also the INDULGE staff took the time, reached out to our emergency contacts, and ask them to write what they admire about us. Then, during Shavasana, the INDULGE staff read all the love messages out loud to us. What a perfect ending!
I had a blast, and I am so glad I was able to attend it ( my weekend trip got cancelled 2 days before the event).
I really enjoyed the rainy weekend as I got to spend some quality time with my hubby. On Saturday we did the Factory Tour at the Roasterie in Kansas City downtown and made homemade pizza for dinner (LOVE “off meals”). Sunday morning we went to church, then after lunch we talked to our family from Brazil, and just relaxed the rest of the day!
Brazilian style pizza: nutella, white chocoate and strawberries…So good!

Now changing subjects, as you all know, I am not very disciplined when it comes to skin care and just few months ago I had my first skin treatment at Bare Med Spa (the Hydrafacial treatment).
After doing the Hydrafacial, the Bare Med Spa esthetician recommend me the Dermaplane treatment and I have done it twice already. I absolutely LOVED the hairless feel and smoothness of my skin afterwards.
A little bit about the DERMAPLANE TREATMENT
Dermaplane is a procedure that removes the dead epidermal cells of your skin and all the “tiny” facial hairs as well. The results are immediately: healthier looking and smoother skin. The procedure takes around 30 minutes and is totally PAINLESS. I know some of you think it is painful because of the blade used to scrap off the dead skin, however, it is NOT. At the Bare Med Spa, the Dermaplane procedure is a very relaxing experience as they finish up the section with a very refreshing moisturizing mask combined with a facial steam to hydrate the new facial skin.

Also, as probably saw on my Instagram, I recently did my first Spray Tan EVER at Bare Med Spa. At the first section I asked her to go easy on the color because I was honestly a little afraid to turn orange lol. However, like always, they did an AWESOME job. I loved my skin color afterwards and how natural it looked. And besides, it is much healthier to our skin than doing tanning beds. And of course I got a little addicted to it and went for one more spray tan section a week later. On my second time I asked Lindsey make me look tanner and she did awesome, I literally felt I was in Brazil and had just came back from the beach! It makes me so excited for summer 🙂

Today I want to share a few easy tips for you to start living a healthier life.
These are 5 steps that I personally experienced when I decided to lose weight prior to my weeding in 2013 and that definitely helped me change my lifestyle!
Before we go on with the tips, I am going to talk a little bit about me. Volleyball was my true love, I have been playing it since when I was 8-years-old until I graduated from college in 2013, I had a very active life but a terrible eating habit, which included cookies, chocolate, pop, fast food, and pizza almost everyday. However, because of my height, I never realized I was overweight. You know those “fake skinny” people? Sometimes they look skinny externally but carry a terrible body composition, well that was me!
During my college years, I was lucky enough to meet the love of my life. We got engaged all the way back in 2010, and in June of 2013, I decided that I wanted to lose weight for the wedding (that happened in December of the same year). My journey wasn’t easy but was definitely worth it. After 6 months, I did not just lose weights for the big day but I completely changed my lifestyle. I started to change somethings and whole wheat foods, dark chocolate, vegetables and sugarless coffee were not longer a sacrifice and exercising became my good addiction! Today I am glad and happy to say that is not only about losing weight, but is about living healthier and living well!
5 TIPS FOR A HEALTHIER LIFE
1 – Set attainable goals:I think this is the most important one. Setting up a goal and having the desire to change is the very first step. Grab a paper (it can be your calendar, your agenda, or any peace of paper), write down your desires, and set a deadline by when you want to achieve them. I love writing down my goals so I cross them out whenever I reach them (just like when we check mark our grocery shop list). Sometimes also like to set goals for the week, short goals can be attained faster and help us to keep pushing for the long-term goals.
2- Make a action plan: After you set your goals, it is time to create a action plan. Knowing all the steps you need to follow to successfully reach your goals, is the key. For example, all the way back in 2013, my initial action plan was to find time to go workout at least 5 times a week and to make healthier eating choices.
3 – Slowly make healthier choices:As I told you, my eating habits were very unhealthy and this was definitely the hardest part for me. Just like baby steps, I started by making few small changes. First I started trying dark chocolate and would go up on the cocoa % every week. So you know, today one of my favorites chocolates are the 90% cocoa. I gave up on pop and white flour and started to eat whole wheat breads, bagels, and pasta, brown rice, quinoa and rice cakes. Traded the whole milk for skim milk or almond milk and also started to eat natural peanut butter. My advice for you is: DO NOT be radical. Instead, start making small substitutions. Strict diets are painful and do not last long.
Exercise:Now that you have made changes in your eating habits, it is time to burn all those healthy calories. Because after all the math is simple, we need to burn more calories than what we consume per day to be able lose weight. And to make this journey easier my advice is for you to find for a exercise you like and enjoy doing it. When going to the gym or studio becomes an obligation, then it is time to change. I personally like going to classes like spinning, cycling, etc. Working out with other people who are striving the same goals, helps to keep me motivated.
Cook and plan your meals:Cooking your own food and organizing your meals is the key and will definitely help you to keep focusing on your diet. Plan your days ahead of time and make sure you always have a healthy snack with you whenever you go so you don’t end up eating fast junk food. Another tip is to bring your lunch box to work. Besides the fact you are going to be eating a healthy food, you will also be saving lots of money ( I used to take my lunch to work all the time and I loved).
I have always loved cooking, but if you don’t, here is my advice: get in the kitchen, try new recipes, and get creative. I bet you will be surprised of how many delicious and healthy food you can make!

But anyway, today I want to share with you about my first section of Cryotherapy at Bare Med Spa last week. I had never heard about it before while living in Brazil, so when I saw that they offered it at Bare Med Spa I was really excited to freeze… haha!
I know some of you are probably thinking… But what is Cryotherapy?
Cryotherapy is a treatment that you basically go inside of a big freezer for 2 to 3 min. where they use liquid nitrogen sprayed into the air to bring the temperature down (the duration of each section depends on your body resistance). This treatment is very common among professional athletes and people who have high muscle impact because of the fast and effective results it offers.
Some benefits of the Cryotherapy Treatment:
It reduces muscle pain and soreness
Speeds up recovery
Help to improve joints function
Increase the collagen production
Helps to reduce cellulite
Can burn up to 800 depending of the time and body metabolism
How does it work?
First, Tracy asked me to take off my clothes and wear a robe. Then I wore gloves, socks up to my knees and a special shoe. After I was properly dressed, I went inside of the big tube leaving my head out of the icy area, took the robe off and literally FROZE for 3 minutes. So for you to have an idea, my skin temperature was around 32 F after I was done.
I need to say that the short freeze was SUPER WORTH IT. My muscles felt so relaxed afterwards and to be honest, it is NOT bad at all. It goes by really fast and when you start to feel the “ice burn”, it is time to step off the tube. So, don’t be scared… The Bare Med staff are super nice and they will always make sure you feel as more comfortable as possible.
I sure wish I had that years ago when I played college volleyball. Back then, we had to stay more than 10 minutes in the ice bath after EVERY practice during preseason, NOT FUN.. hahaha!
